Beekeeping in the Mediterranean island of Crete begins from the Minoan era , about 4000 years ago. The bee and honey play an important role in Greek myths , where bee has the face of the priestess of Dimitra , the goddess of the Earth.

 In another myth the bee is the sister of Plenty offers honey, that together with the milk of Amalthea, nourished baby Zeus, the powerful father of the Olympian gods. The emblem with bees of the palace of Mallia as the jars of Knossos, shows the relationship of the bee with the people of Crete from the Neolithic era. About 2,000 plant species found on the island and 160 of these are considered endemic. A large part of the territory covered by the unique blend of aromatic herbs that bees know how to exploit so well.

Cretan honey,famous even in the ancient world, has main ingredient of the Cretan thyme (thymaromelo). The principal amount of migrant Cretan honey is a natural mixture of pine and thyme (pefkothymaromelo) collected in August, when the late thyme immediately followed by a large flow of honeydew in the neighboring pine forests. This natural blend of thyme, pine and herbs, giving an amazing combination of flavors except of his rich nutrients it contains, additionally the ability to slow too much to crystallize, which makes it even more attractive to the consumer.. Also produced smaller amounts of pine honey , orange , sage , thrimpas , heather and Malotira ( Mountain tea , Sideritis Syriaca).

The main features of the Cretan honey is the flavor, the taste and the fludity and somenone doesnt need to be a great gourmet to distinguish if a Cretan honey is thyme or pine etc . Some tests are sufficient to record in our memory the aroma and taste , which is obvious and also the patronage Cretan honey consumers worldwide . Generally, the color of honey is typical of its origin and is considered one of the main quality criteria influencing the choice of the consumer . The dark honeys , are rich in minerals and therefore have high nutritional value , the flower honeys have nice flavor and taste. 

The honey of Crete has a dark blonde light reddish color as the cognac, the pefkothymaromelo honey is quite darker and the pine darker. Honey orange is ,very light colored , like sage and heather is the dark



The main ingredients of cretan honey are: Water, natural sugars . organic acids , proteins , minerals , enzymes , vitamins and other nutrients ... Some of the physical properties of honey is the viscosity which determines the flowability, hygroscopicity and crystallization . Crystallization , known erroneously as " candies " are natural biological phenomenon of the natural raw honey , which does not cause any change in nutritional and biological properties of honey.. Τhecrystallized honey is not spoiled or adulterated . Thyme honey in 6-18 months will crystallize as it has not been heated. 

The orange honey , and other flower honeys can crystallize at 1-4 months. If honey crystallizes ,is best smeared on bread.

 The liquidation becomes a bain - marie ,in water temperature not exceeding 40 degrees Celsius in order not to lose its nutritional value.. The Honey of the beekeeper enters the jar raw, as extracted from the comb . He simply passed through a sieve , not heated. The raw honey , is stable and retains its nutritional value for too long without applying any maintenance method. 

Just keep the container tightly closed, avoid direct exposure to sunlight and installation near heat sources . As honey inhibits the growth of microbes , often used to relieve throat pain and for the cure of wounds , as a poultice .ΤHere are many other therapeutic applications for which there is abundant literature.

Indicatively, honey, plays an important role in metabolism and nutrition , to the the components of bones and cells. A beneficial effect on the heart and liver , regulates the stomach acidity . Tonic , helps faster recover of health and has antiseptic properties and antimicrobial activity..
